Steamed and Seared Cabbage

Ingredients
- 1 ea head of cabbage
- olive oil or ghee
- salt and pepper
Instructions
- Cut the cabbage into 8 wedges, leaving the core in place. Place the wedges on a baking sheet, cut-side down. Coat each side with oil or ghee, then season with salt and pepper.
- Cover the sheet tightly with foil. Roast at 500 for 20 minutes. Remove the foil, return to the over to let the first side brown, turn the wedges over, and let the second side brown.
- Plate and serve hot.
